Easy Summer Meals
Summer has finally arrived and lucky for you Western Australia has some of the best fresh grown produce.
Now, just because you are on uni and school holidays doesn’t mean you are not going to be busy exploring the beautiful state so we will be sharing some of our favourite quick and easy summer recipes.
Avocado and Prawn Salad
You would be crazy to live in WA and not try some amazing local prawns, and this recipe will be perfect for a warm summer’s night when you don’t really feel like eating much.
- 200g bag large cooked prawns
- 1 large ripe avocado, halved, peeled and sliced
- 200g punnet cherry tomato, halved
- 4 spring onions, finely sliced
- 1 romaine lettuce, shredded
- 2 tbsp olive oil
- Juice of 1 lemon
- 3 tbsp mayonnaise
- 2 tbsp tomato sauce
Whisk the mayonnaise, tomato sauce and half of the lemon juice together. If it’s a little thick, add a splash of water.
Put the prawns, avocado, tomatoes, spring onions and lettuce in a large salad bowl, drizzle with the olive oil and lemon juice, toss gently, then serve with the dressing.
